Rachael Horton's Spaghetti Squash & Meatballs

Squash Ingredients:

1 medium spaghetti squash
1 tbsp. salt
1 tbsp. pepper
2 tbsp. olive oil

1.   Preheat the oven to 425.
   Cut the squash lengthwise from stem to bottom and scoop out all of the seeds.
3.   Season the squash with the salt, pepper, and olive oil.
   Place squash in a casserole dish cut-side down and fill with about an inch of water. Bake the squash for about 30-45 minutes or until tender.
   Remove squash from oven and let rest for about 5-10 minutes. Once cooled use a fork to scrape the flesh creating long strands (like spaghetti). Place the flesh inside the sauce you have rendering on the stove.


Sauce Ingredients:

16 Roma tomatoes
1 tbsp. chopped garlic
¼ cup basil
1 tbsp. pepper
1 tbsp. salt
1 tbsp. sugar
3 tbsp. Italian seasoning
2 tbsp. olive oil
1/3 cup parmesan cheese
1 small onion, diced thin

1.   To start you need to peel the tomatoes. Bring a large pot of water to a boil. Once water is boiling place all the tomatoes in the boiling water for about 1 minute until the skin starts to crack. Immediately remove from water and place in a bowl. Once they are cooled down peel all the skin off and place tomatoes in a food processor.
   In a large sauté pan, heat the olive oil over medium/high heat. Add the chopped garlic and the diced onion and sauté until translucent 3-4 minutes. Add the tomatoes, basil, pepper, salt sugar, Italian seasoning, and parmesan cheese.
   Let render while your squash, meatballs, and bread cook.


Meatball Ingredients:

1lb beef
1/3 cup Italian breadcrumbs
1 tbsp. salt
1 tbsp. pepper
1 tbsp. fresh garlic
1 tsp. garlic powder
1 tbsp. oregano
1 egg
2 tbsp. water
2 tbsp. parsley
¼ cup parmesan cheese
6-8 mozzarella balls

1.   Line a sheet tray with aluminum foil and spray with cooking oil.
   In a large bowl mix together all ingredients except the mozzarella balls.
3.   Take about 3 tbsp. of the meat mixtures and roll into a ball. Press s mozzarella ball into the ball of meat, making sure that the meat completely covers the cheese. Place meatballs on a sheet tray.
   Bake for about 10-15 minutes or until meatballs are just done.


Garlic Bread Ingredients:

1 Italian bread loaf
2 cups mozzarella
1 stick of butter
2 tbsp. of garlic
¼ cup parsley

1.  Cut loaf of bread in half.
2.   Heat up butter and garlic together until melted and hot.
   Spread butter mixture onto the bread, cover with mozzarella cheese, and top with parsley.
   Bake for about 5-7 minutes until cheese is melted and the sides of the bread are golden brown.
